Dishes bursting
with all the flavours of the Med.
Mixed
grilled salad
Serves 6
This appetiser
really does give salad a new meaning and will certainly brighten and
decorate your dinner table.
2 large
red peppers
1 large yellow or orange pepper
15ml/1tbsp olive oil
2 medium-sized courgettes, diced
10 green olives
10 black olives
1tbsp capers
4 large Turkish pickled
peppers or 1 pickled gherkin, cut into strips
4 large plum tomatoes
2tsp chopped mint
50ml/2 fl oz sweet or
balsamic vinegar
11/2tsp brown sugar
11/2tsp tomato purée
1. Grill
the peppers until charred.
2. Peel the skin and cut the pepper into strips (saving as much of its juices
as possible). Place in a bowl.
3. Heat the olive oil.
4. Sauté the courgette until golden brown, cool, then place in a
bowl with the peppers.
5. Mix the remaining solid ingredients into the bowl.
6. Add the vinegar, sugar, tomato purée and stir well.
