In this course, you’ll learn how to create a perfect balance between textures and flavours, the ultimate goal of any exquisite dessert. Led by Danielle, a celebrated Vegan Executive Pastry Chef renowned for her award-winning creations and passion for crafting beautiful, delicious plant-based desserts, you’ll learn to create desserts that are both visually stunning and incredibly tasty.

You will also refine your skills in delicate decoration techniques, so often neglected in vegan pastry!

By the end of the course, you will be able to create your own “signature” recipe that will set you apart and enhance your culinary reputation.

A key focus of this course is the professional approach to pastry, highlighting the importance of organisation and preparation. Time is our most precious ally, and throughout the course, you’ll discover how to optimize it by mastering techniques for creating desserts that can be prepared in advance and frozen for convenience. You’ll also learn how to adapt recipes for various formats, whether it’s for afternoon tea, elegant plated desserts, or buffets.

Recipes you’re likely to make include:

Nut-ella Surprise This vegan dessert features roasted hazelnuts and creamy milk chocolate. A tangy lemon curd balances the sweetness of the Nutella mousse, while a hazelnut croquant adds the perfect crunch to this delightful dessert.

Pomme d’Api A spiced apple jelly and compote, with its delicate flavour, is beautifully complimented by a caramel cream. A soft, smooth hazelnut sponge is perfectly balanced by the sharp contrast of a surprising ginger crumble.

A Twisted Fruit Tartlet A French sable pastry base with a pistachio panna cotta filling decorated with fresh fruit.

Do I need any prior experience?

Not at all. Please don’t worry if you are a beginner as this class is completely suitable for all levels. All you need is a willingness to learn and give things a go!

What to expect on the day

Tutors will guide you through the preparation of various dishes, teaching you essential cooking skills and techniques while introducing you to key ingredients.

You’ll work mainly individually, allowing you to gain hands-on experience.

You’ll enjoy a relaxed and interactive learning environment with plenty of tastings, and you can take everything you make home with you.

What do I need to bring?

Please bring containers for taking food away with you

There will be the opportunity to purchase additional refreshments and merchandise such as aprons.

Please note that we are a cashless establishment and only accept card payments.

Meet your tutor

Danielle is a Belgian Vegan Executive Pastry Chef with a true love for chocolate. Over the years, she has worked as an Executive Pastry Chef in luxury 5-star hotels, both in the UK and internationally. Danielle has earned several gold and silver medals in prestigious international culinary competitions, such as the “Salon Culinaire de la Gastronomie au Liban.” Her journey into vegan desserts began when she noticed the limited, often uninspiring options available for vegan guests. Determined to change this, she set out to create her own line of vegan desserts that are not only delicious but beautifully presented. Now, Danielle’s mission is to prove that vegan desserts can be easy to make, taste incredible, and look stunning!
