Join us for an exciting class celebrating the versatility of pulses. Whether you’re a seasoned plant-based cook or just pulse-curious, this class will introduce you to globally inspired dishes that showcase lentils, beans, peas and chickpeas in delicious and creative ways.
You’ll learn essential techniques for cooking pulses from scratch, layering flavours with spices and herbs, and creating nutritionally balanced, satisfying meals. Expect plenty of tasting, tips, and take-home recipes to inspire your everyday cooking.
Recipes you are likely to make include:
Spiced Moong Dhal Fritters with Coriander and Mint Chutney
A vibrant, protein rich and naturally gluten-free dish. It’s big on flavour and satisfying too!
British Fava Bean and Spinach Shakshuka with Zhoug and Whipped feta
A vibrant tomato-based stew with warming spices, eggs and fresh herbs.
Sun-Dried Tomato and Black Olive Braised Green Lentils with Smokey Aubergine Steaks and Pink Tahini Sauce
Earthy green lentils are given a makeover in this umami packed accompaniment paired with marinated aubergine steaks in this Mediterranean inspired dish.
African Chickpea, Sweet Potato and Berbere Koftas with Peanut Sauce
A bold and satisfying dish infused with African spices balanced by the sweetness of the potato.
You’ll be able to make the recipes you learn on this class at home, time and time again. After your cookery experience, you will be emailed a pack for you to keep containing all of the recipes you learned on the day.

Do I need any prior experience?
Not at all. Please don’t worry if you are a beginner as this class is completely suitable for all levels. All you need is a willingness to learn and give things a go!

What to expect on the day
Tutors will guide you through the preparation of various dishes, teaching you essential cooking skills and techniques while introducing you to key ingredients.
You’ll work mainly individually, allowing you to gain hands-on experience.
You’ll enjoy a relaxed and interactive learning environment with plenty of tastings, and you can take everything you make home with you.

Please bring containers for taking food away with you
There will be the opportunity to purchase additional refreshments and merchandise such as aprons.
Please note that we are a cashless establishment and only accept card payments.

Meet your tutor
Maz has a passion for fantastic flavours! She teaches on a wide range of courses at COOK! with the Vegetarian Society including Thai and Vietnamese Cookery and Vegan Street Food. Maz has worked with big organisations, including the LGBT Foundation and Manchester University, and has has fed the England women’s cricket team too.
