Boxing Day Frittata

Gluten-Free, Low Fat, Nut-Free, Wheat-Free

This dish is a great way to use up any left-overs from Christmas day. It is delicious hot or cold and would make a good addition to a buffet.


Ingredients

  • 500g Christmas left-overs (e.g. cold roast potatoes, peas, carrots, stuffing, parsnips, even cranberry sauce)
  • 50g cheese cut into bite-size pieces
  • 8 large free-range eggs beaten
  • 1 tsp fresh rosemary chopped
  • Salt and pepper to taste

Method

  1. 1. Pre-heat oven to 200C/Gas mark 6.
  2. 2. Line a flan dish with greaseproof paper.
  3. 3. Arrange the Christmas left-overs and cheese evenly into the flan dish.
  4. 4. Beat the eggs, add the chopped rosemary then pour over the vegetables.
  5. 5. Season with salt and pepper and bake in the oven for 30 minutes or until the eggs are thoroughly cooked.
  6. Serve with a healthy salad – such as the super side salad.
