Boxing Day Frittata

This dish is a great way to use up any left-overs from Christmas day. It is delicious hot or cold and would make a good addition to a buffet.
Ingredients
- 500g Christmas left-overs (e.g. cold roast potatoes, peas, carrots, stuffing, parsnips, even cranberry sauce)
- 50g cheese cut into bite-size pieces
- 8 large free-range eggs beaten
- 1 tsp fresh rosemary chopped
- Salt and pepper to taste

Method
- 1. Pre-heat oven to 200C/Gas mark 6.
- 2. Line a flan dish with greaseproof paper.
- 3. Arrange the Christmas left-overs and cheese evenly into the flan dish.
- 4. Beat the eggs, add the chopped rosemary then pour over the vegetables.
- 5. Season with salt and pepper and bake in the oven for 30 minutes or until the eggs are thoroughly cooked.
- Serve with a healthy salad – such as the super side salad.
