Carrot, Cheese, and Onion Tart

This beautifully simple Carrot, Cheese, and Onion Tart is a perfect blend of flavours and textures. With the sweetness of grated carrots, the sharpness of Cheshire cheese, and the aromatic touch of smoked paprika, this tart is sure to be a hit at any meal.
Ingredients
For the filling:
- 150g vegetarian Cheshire cheese, grated
- 2 medium carrots, grated
- 1 onion, finely sliced
- 1 tsp smoked paprika
- ½ tsp salt
- ⅛ tsp ground black pepper
- 1 x 320g pack ready rolled shortcrust pastry
- 50ml milk
- You will also need a greased 20cm flan/tart dish
Method
- Preheat the oven to 200°C / fan 180°C / gas 6.
- In a large bowl, mix all of the filling ingredients together.
- Line the flan dish with the pastry. Trim away any overhang.
- Transfer the filling to the lined dish and press down firmly.
- Using a pastry brush, glaze the edges of the pastry and the top of the filling.
- Bake in the preheated oven for 35-45 minutes until golden brown.
- Serve immediately or cool and refrigerate for 2-3 days.
