Roasted Radishes with Lemon and Chive butter

Serves 2
Egg-Free, Gluten-Free, Nut-Free, Wheat-Free

Ingredients
- 200g radishes, topped and tailed
- 2 tbsp vegetable oil
- salt and pepper, for seasoning
To the butter:
- 30g dairy or vegan butter, at room temperature
- The zest of ½ lemon
- 2 tbsp chopped chives
Method
- Preheat the oven to 200°C / fan 180°C / gas 6. In a baking dish, toss the radish in the oil and season liberally with salt and pepper.
- Roast in the preheated oven for 20-25 minutes until deep pink in colour.
- Meanwhile, in a small bowl, mix the butter with the lemon zest and chives.
- Remove from the oven and toss in the butter.
- Serve immediately.
