Roasted Radishes with Lemon and Chive butter

Serves 2

Egg-Free, Gluten-Free, Nut-Free, Wheat-Free

Ingredients

  • 200g radishes, topped and tailed
  • 2 tbsp vegetable oil
  • salt and pepper, for seasoning

To the butter:

  • 30g dairy or vegan butter, at room temperature
  • The zest of ½ lemon
  • 2 tbsp chopped chives

Method

  1. Preheat the oven to 200°C / fan 180°C / gas 6. In a baking dish, toss the radish in the oil and season liberally with salt and pepper.
  2. Roast in the preheated oven for 20-25 minutes until deep pink in colour.
  3. Meanwhile, in a small bowl, mix the butter with the lemon zest and chives.
  4. Remove from the oven and toss in the butter.
  5. Serve immediately.
