Ingredients

  • 225g tomatoes, chopped
  • 2 onions, finely chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • A few drops of Tabasco sauce
  • Handful fresh coriander, chopped
  • salt and freshly ground black pepper, for seasoning

Method

  1. Stir all the prepared ingredients together in a large bowl and season to taste.
  2. If possible leave to stand for about 30 minutes at room temperature to allow the depth of flavour to fully develop.
