It’s been another exciting few months here at the Vegetarian Society Cookery School, and we’re pleased to announce a brand-new 5-day course – The Foundation Certificate in Vegetarian and Vegan Cooking.
Suitable for beginners, aspiring future chefs, and caterers wanting an insight into incredible veggie food, this course will allow for a complete mastery of all of the essentials of vegetarian and vegan cooking. With our expert tutors on hand to keep you at ease you’ll be thoroughly prepared to develop an excellent foundation with which to continue some fantastic veggie adventures.
This course has been designed with you in mind. Several of our students were looking to combine into one complete week of cooking many of the exciting skills they had been learning at our various courses – to emerge as confident kitchen superstars ready to take on any culinary challenge.

So what will you learn on this course?
This is a very practical, hands-on course, but there will still be enough of a theoretical element to give a solid background to vital techniques. Starting off with some good habits that will stand you in good stead whenever you are in the kitchen, this foundation course comes equipped with a Chartered Institute of Environmental health (CIEH) Level 2 Food Hygiene accreditation and then moves onto professional knife skills. Here you will gain the skills you need to slice and dice with ease, and you’ll never cut onions the same way again.
Once this is mastered, it’s time to get to grips with a wonderful world of flavours – and learn what to do with them all. Umami tastes are first on the list as you learn the cooking essentials to bring out all the right notes to tantalise everyone’s savoury-flavour-loving taste buds.
Next up is to develop a thorough understanding of egg- and dairy-replacements, and know what to use and when in order to get the best results. You’ll pick up so many wonderful techniques and methods, your kitchen will become a haven of exciting opportunities – and once you have these foundation skills and knowhow, your only culinary limit will be your imagination.
One thing that is very important in vegetarian and vegan cooking, which is sometimes overlooked, is about knowing the nutrition of our food. This foundation course will teach you the virtue of every vegetable, the multitude of fortified products, and their value in a vegan diet.
This course isn’t just about vegetables of course, and we will introduce practical uses for nuts, grains and pulses – as well as tofu and tempeh – incredible ingredients when used in the right way.
