Hot on the heels of last year’s National Vegetarian Week partnership, the bestselling authors and vegan chefs Henry Firth (pictured above, left) and Ian Theasby, better known as BOSH!, showed their support again this year! Here they chat to us about how they’ve been keeping busy in lockdown, recipes for the BBQ, plus their top tips for vegan cooking.
Many of us are cooking more at home while our favourite restaurants are closed. Do you have any tips for giving meals that restaurant wow factor when cooking for yourself?
Get creative with your herbs and spices! We love layering flavours into our dishes, especially in curries. Our Curry House Jalfrezi is a great example of a fakeaway you can recreate at home.
What have you missed most in lockdown?
Not being able to see our family and friends has been tough, as we’re sure it has been for everyone. We’re looking forward to when we can get everyone round again for a BBQ.
What have you enjoyed most about lockdown?
We loved our live cookalongs, which we hosted every weeknight throughout April and May. It was so fun cooking along with our followers and introducing others to the world of plant-based cooking.
What would your advice be to people who want to build their knowledge and skill around veggie and vegan cooking?
Do your research! We’ve got lots of free content on our channels, on our TV show and in our books too. Also, don’t be afraid to get creative and try something new – whether that’s an ingredient you’ve never cooked with before, a spice you’re not familiar with or completely remixing a dish!
What do you usually eat and make around the BBQ season?
We love a good spread! We’ll do coleslaws, potato salads, colourful salads. Then on the BBQ will be jackfruit, veggie skewers, veggie sausages and Beyond burgers! Oh, and of course our Watermelon Jägerbomb!
