Bircher Muesli with Apple and Berries

Egg-Free, Healthy, Nut-Free, Wheat-Free

Make this muesli the night before you want to eat it. You could replace some of the oats in this cereal with barley, spelt, quinoa or buckwheat flakes. With calcium-rich yogurt and fruits, this makes a nutrient-laden start to day.


Preparation Notes

This recipe needs to be left overnight in the fridge.


Ingredients

  • ½ medium apple, grated
  • 100g rolled oats
  • 120ml cloudy apple juice
  • 2 tsp lime juice
  • 3 heaped tbsp low-fat plain natural
  • Pinch of ground cinnamon
  • 1 large banana
  • 40g frozen berries, defrosted
  • 2 tbsp pumpkin seeds

Method

  1. Combine the apple with the oats in a bowl.
  2. Add apple juice, lime juice, yogurt and cinnamon to the bowl and mix until all the oats are covered.
  3. Cover the bowl and place in the fridge overnight.
  4. Stir and add more yogurt if too thick. Serve with banana, berries ands seeds.

    Note: this keeps for 2 days in the fridge.
