Edamame Dip with Carrot Sticks

Egg-Free, Gluten-Free, Wheat-Free, Nut-Free, Healthy

Ingredients

  • 150g frozen soya beans
  • 2 tbsp low-fat plain natural yoghurt
  • 1 small avocado
  • ½ small red chilli
  • 1 tsp lime juice
  • 10g fresh coriander
  • Pinch of salt
  • 2 carrots cut into batons

Method

  1. Place the soya beans in a colander and run under cold water to defrost.
  2. Add all of the ingredients into a food processer and blitz to a coarse texture. You may need to loosen with a little water.
  3. Serve with carrot batons.
