Marinated Halloumi Cheese Skewers with Mediterranean Vegetables

Preparation Notes

Plus at least 30 minutes to marinate the kebabs


For the skewers

  • 18 whole pitted black olives
  • 1 clove garlic, crushed
  • 100ml olive oil
  • 400g vegetarian halloumi cheese, cut into 2.5cm cubes
  • 3 large tomatoes, cut into 2.5cm cubes
  • 600g just-cooked new potatoes, cut in half length-ways
  • 3 large courgettes, cut into 2.5cm cubes
  • 1 red onion, cut into 2.5cm cubes
  • aubergine, cut into 2.5cm cubes
  • kebab skewers

To serve

  • Pitta breads


  1. Place the garlic, olives and olive oil into a small bowl and mix together to form a marinade.
  2. Thread the cheese and vegetables onto skewers.
  3. Pour the marinade over the kebabs and leave to marinate for a minimum of 30 minutes.
  4. Cook over barbecue until tender,turning after two minutes on each side, and serve immediately in pitta bread.
