This is a quick and easy breakfast which is totally animal free and sure to set you up for the day!
Ingredients
For the fried potatoes with onions and herbs
- 1 large potato finely chopped
- 1 medium onion finely chopped
For the smoked tofu rashers
- 200g smoked tofu sliced
For the scrambled tofu ‘eggs’
- 200g tofu drained and mashed
- ½ red pepper finely chopped
- 4 mushrooms diced
- Pinch of turmeric
- Tamari to marinate
To finish the breakfast
- Veggie sausages
- Mushrooms
- Tomatoes grilled
- Baked beans
Method
- Start by making the fried potatoes with onions and herbs: Finely chop one large potato and one medium onion.
- In a large non stick frying pan gently fry the potato for 5 minutes,then add the onion and 1 teaspoon of mixed herbs. Continue to frygently for another5 minutes.
- To make the smoked tofu rashers: Thinly slice one block of smoked tofu and place in a shallow dish.
- Liberally sprinkle with tamari and leave to marinate for at least one hour, ideally overnight, if you can remember to do it in advance! Gently fry in a little oil for 4 minutes on either side.
- To make the scrambled tofu ‘eggs’: Gently fry the vegetables until soft, add all of the remaining ingredients and continue to cook for 2 minutes.
- Serve your rashers, scrambled tofu and fried potato with veggie sausages(check for free range eggs or egg free), mushrooms, grilled tomatoes and baked beans for the perfect lazy Sunday morning.
