Sambal

Sambal is a spicy Indian accompaniment made from chillies. It’s quick and easy to make, and gives an extra bit of heat to your curry.
Ingredients
- 1 tbsp sunflower oil
- 16 long red chillies, sliced (deseed for less heat)
- 3 banana shallots, peeled and sliced
- 5 cloves garlic, peeled and sliced
- ½ tbsp palm sugar
- ½ tbsp salt
- ½ tsp white pepper
Method
- In a saucepan, add the sunflower oil with a pinch of salt, then fry the sliced red chillies, finely chopped shallots and garlic, stirring continuously.
- Transfer in a food processor and process into a paste. Put back in the pan on low-medium heat for another 10 minutes. Finish with palm sugar, salt and white pepper
