Drop scones made a great alternative to pancakes and can be sweet or savoury. For this recipe, you need to ensure the bananas are still quite firm and unripened for best results.
Ingredients
For the topping
- 200g cream cheese
- 2-3 tbsp full-fat milk
- A handful chives chopped
For the banana drop scones
- 2 large, very green, bananas, peeled and mashed
- 25g onion, very finely chopped
- 1 clove garlic, crushed
- A pinch of dry oregano
- A pinch of dry thyme
- A pinch of salt and pepper
- 1 free-range egg beaten
- 2 tbsp oil for frying
To garnish
- A few extra chives chopped
Method
- To make the topping: Mix together the cream cheese with the chopped chives and a little milk, until it forms a thick pouring consistency.
- To make the scones: Mix together the remaining ingredients, except the oil, to make the scone mixture.
- Heat the oil in a frying pan. Drop a spoonful of 1⁄8 of the mixture into the pan and fry until set. Turn over and cook on the other side then set aside to cook the next drop scone. Repeat for all 8 drop scones.
- Serve the drop scones hot with lashings of the cream cheese and chive topping, plus a few extra chives sprinkled on top for garnish.
