Brussels Sprout Gotu Kola Sambola

This crunchy side salad is a Christmas variation on the popular Sri Lankan dish Gotu Kola Sambola. It offers an alternative way to use Brussels sprouts. If you can’t get fresh coconut, desiccated will work too.

Ingredients

  • 150g Brussels sprouts shredded
  • 3 shallots finely diced
  • ½ lime juiced
  • 1 green chilli finely chopped
  • 10g fresh coconut grated
  • 20g flaked coconut toasted
  • Salt and pepper, to taste

Here is some of the change-making work we do…

Method

  1. Simply mix all the ingredients together and season to taste.
